This is a recipe from a rebellious young italian chef who decided to embrace American recipes instead of scoffing at them because they're not italian. He had the fortune to have spent many summers at his relative's house in New Jersey where he got to eat many truly american staples including pancakes for breakfast, barbeque in the summer and Cobb Salad at the local diner owned by his uncle. To many Italians, American cuisine is stupid and below them since the food of Italy is the food of God. The young chef uses typical local ingredients to create dishes that are at once local and at the same time transcontinental. He lives and cooks with his wife Esmeralda at his small restaurant in Florence.
